Labs outside the Science curriculum

I was recently saw some students in a geography class at my sons middle school carrying gallons of water around the bus ramp to get a sense of what the children in Haiti had to go through on a daily basis.  I then observed math students using a yard stick and string to estimate and compare the height of two trees.  Lab work is not just for Science anymore!  Every subject can take part in hands-on learning activities that get kids out of their desks and into real-life applications of curriculum.  Share with us some of your great “lab” experiences.
